Betsy and Matt Baker
Matt and I have thought about owning our own inn/B+B since we first stayed at one in the White Mountains of NH back in 1987. I have been in the hotel/restaurant business since I was 15. I attending Johnson and Wales University in Providence Rhode Island and got my degree in Hotel/Restaurant Mgt.
Matt did 21 years in the Submarine Service and retired and then had another career in Facility Management. Together we have the perfect skill set to run a B&B. He is the Fix-It guy and I have the hospitality background.
We like to say running a B+B is not just a job, it’s a life style.

Chefs Heather Harrison and Michael Krasoski
Mike and I met in 2004 during our culinary training at the Le Cordon Bleu in Orlando, Florida. It was in our first true cooking class that our chef, Chef Jimmy, put us together for our practical exam and told us we’d make a great team. After a year of working side by side in the kitchen and the classroom, we formed a brotherly/sisterly bond and moved out to San Diego, California together to complete our internships – Mike at a beautiful five-star private club centered in downtown, and I at a French wholesale bakery. Once our internship was completed, Mike stayed on at the University Club while I became an Event Coordinator at a fine dining restaurant and a continued my experience as a Catering Manager at a hotel arranging fundraising galas, weddings, and corporate events.
Mike left San Diego to cruise down to the Caribbean as a personal chef on a sailboat, and eventually returned to Orlando, working at yet another fine dining restaurant in the heart of downtown. After a few more years in San Diego, I moved back to my hometown of New Smyrna Beach and began working at the Night Swan Bed and Breakfast. After two years, I managed to convince Mike that he needed to come over to the beach, and the bed and breakfast was a great break from the fast pace hustle and bustle of the restaurant industry.
Chef Jimmy was right – Mike and I do make a great team – he does the cooking, I do the baking. I work with guests to plan their functions and he is the muscle that makes it all happen. We both love our home at the Night Swan B&B and excited to be apart of such a wonderful team with Betsy and Matt Baker.
